Southern Ginger

1 mint sprig
1/2 oz sugar syrup
1/2 oz lemon juice

Virgin Blackberry Fizz

3 quart blackberries
4 cups water
3 cups sugar
1 tbsp whole cloves
1 tbsp allspice (whole)
2 cinnamon sticks
7-Up - soda (or equal soda)

Crush blackberries in a large kettle. Add water and bring to a boil. Reduce heat to medium and cook for 10 minutes. Strain through a jelly bag, reserving juice and discarding pulp. Add water to juice if necessary to equal 2 quarts; pour into a large kettle. Slowly stir in sugar until dissolved. Place spices in a cheesecloth bag; add to juice. Simmer, uncovered, for 30 minutes. Bring to a boil; remove the spice bag and discard. Pour hot into hot jars, leaving 1/4″ headspace. Adjust caps. Process for 15 minutes in a boiling-water bath. To serve, mix about 1/3 concentrate with 2/3 soda. Yield: about 4 pints concentrat

Carbonated Apple Juice

1 can frozen apple juice concentrate (thawed)
3 3/4 cans (use concentrate can) water
1 tbsp honey
1/8 tsp wine yeast

Combine the concentrate, water, honey, and yeast.

Sanitize enough plastic soda pop bottles and caps in a weak bleach solution. (About 1 teaspoon unscented household bleach to 1/2 gallon of water.) Rinse the bottles and caps well with tap water to remove the bleach solution. Sanitize your spoon, funnel, and anything else that contacts the soda pop solution.

Pour juice solution into the bottles, leaving about 1/2 inch of air space in each bottle.

Cap the bottles and place in warm place (basic room temperature) for several days. Squeeze the bottles daily to check for carbonation.

When the bottles are nearly rock hard, place them in the refrigerator. Enjoy!

Apple Berry Fizz

1/2 cup strawberry or raspeberries
1 cup apple juice
1/2 cup frozen berries
1/3 cup oat bran Cereal
1/2 cup club soda

Place apple juice, berries, ice cubes or water, oat bran cereal, and club soda into blender. Process until smooth, about 30 seconds. Pour into glasses and serve immediately.
