2 oz light rum
2 tsp bourbon whiskey
1 tsp dark creme de cacao
1 tsp cherry brandy
4 oz hot coffee
2 oz heavy cream
Pour the rum, bourbon whiskey, creme de cacao, cherry brandy and coffee into an Irish coffee cup or glass. Pour the cream carefully over the back of a teaspoon so that it floats on top, and serve.

Pour the rum, root beer and soda into a cocktail shaker half-filled with ice cubes. Shake well, and strain into a cocktail glass. Garnish with orange peel, and serve.

1 L Bacardi 151 rum
1 L Blue Curacao liqueur
1 L sweet and sour mix
Tropicana orange juice
Add half bowl of ice to a punch bowl. Add the Bacardi 151 and Blue Curacao, and mix with the ice. Add the sweet and sour mix. Add orange juice until smooth to the taste and a really green cool color like the incredible hulk.

2 liters Tahitian Treat soda
1 liter dark rum
1 - 12 oz frozen orange-pineapple juice concentrate
1 cup Malibu coconut rum
Open frozen juice and put concentrate in a one gallon pitcher. Do not add water. Add entire liter of dark rum, then add coconut rum. Mix until frozen juice concentrate dissolves into rum, and add entire 2-liter of Tahitian Treat. Pour into hurricane glasses, and serve.

2 oz Irish cream
6 oz hot chocolate
amaretto almond liqueur
3 oz Captain Morgan Parrot Bay coconut rum
3 tbsp coconut milk
3 tbsp crushed pineapples
1 1/2 oz whipped cream
chocolate syrup
1 maraschino cherry
Make a zig-zag pattern of chocolate syrup on the inside of the glass while turning the glass. Blend rum, coconut milk and pineapple, with 2 cups of crushed ice, on high for a few seconds, until all large chunks of ice are gone. Pour into glass. Top with whipped cream and a cherry.

2 tsp water

- Soda water to top up
Method:
- Shake all the ingredients well with ice and strain into a tall tumbler.
- Add ice cubes, top up with soda water and stir well.
- Decorate with a slice of lemon and cocktail cherry.
- serve with a straw.
Tip: To counter alcohol’s diuretic effect drink plenty of non alcoholic fluids, water or fruit juices. Do not drink coffee as that is also a diuretic.
